Recipes: Sautéed Romanesco Cauliflower with Walnuts, Garlic & Shallots

Romanesco Cauliflower (Substitute: broccoli or cauliflower)

2 tbsp Olive Oil or Walnut Oil

2 tbsp thinly sliced shallots

4 cloves of garlic, sliced

1 tsp crushed red chilies (optional)

¼ cup toasted walnut pieces

1 tbsp lemon juice

Remove the tough edges of the cauliflower and separate the florets taking care not to break the individual florets.  Wash the florets and place in a sauce pan with 2 tbsp water. Bring this to a boil and close the pan with a tight lid. Let it cook for 2 minutes on medium heat, then remove and immediately plunge the florets in cold ice water to stop the cooking.

Advice: March Madness & Marriage!

No, this is not about the NCAA Men’s Division I Basketball Tournament. It is just a catchy title to help you and your spouse, if you are trying to manage conflict-in March!  I recently gave advice for marriage on my personal Facebook Page (while celebrating my 47th wedding anniversary) and the response made me think it might be worth sharing, here.

So these are a few tips, I give couples in my counseling practice, to prevent and resolve unnecessary conflict in a marriage. I say unnecessary, because, disagreements and differences of opinions are a healthy part of any relationship.  How issues are shared and heard makes all the difference in whether a relationship becomes stronger or fractured and weakened. Try these, to bring you and your spouse closer, instead of pushing each other away, the next time you get mad.

Homer removed his hard hat, leaned up against a tree, and opened his lunch pail. Another day, another Spam sandwich.

“What’s happenin’?” Jake asked, plopping on the grass beside his pal.

“Same old thing,” Homer replied. Sure could use a change of pace. How ‘bout you?”

“Ya know, when Phyllis left me last year, I thought it was the end of the world. But I’ve survived, and then some.”

“How so?” Homer asked.

Jake grinned and chugged from his thermos. “She called me a loser and almost made me believe it. But then I joined Jolly Match-Makers.”
